Menu Plan Monday: Another Busy One!


It is officially kids' week!

In other words, my kids will be preparing most of the meals, because I am sick. I don't feel that badly, but I lost my voice after speaking at a women's retreat all weekend, and I've got another one coming up, and I'm busy!

Last week Rebecca made spaghetti all by herself, with no input from me at all, and it was great. So I figure we can repeat the performance!

Monday: Shepherd's Pie. Katie wants to learn how to make this, and I'm all for that! I love our shepherd's pie. I just brown ground beef and add tomato soup, worcestershire sauce, and some salt and pepper. Put that in the bottom of a casserole dish and cover with frozen veggies. Then put mashed potatoes on top. It's yummy!

Tuesday: Steaks on the barbecue. We have to use our barbecue, because our good weather is probably soon to be a thing of the past! And steaks are really easy to make. I'll just stick some potatoes on the barbecue, too, and it's not a hard meal!

Wednesday: Spaghetti. Becca's turn!

Thursday: Pork roast with rice and veggies. I love roasts, because they're easy but they taste great! I made a wonderful one for company last week, and here's the recipe:

2/3 cup maple syrup
3 tablespoons dijon mustard
2 tablespoons soy sauce
2 tablespoons cider vinegar
salt & pepper

Mix that together and pour over roast. Roast at 350 for around 1 1/2 hours for a two pound roast. Then mix some corn starch and water into a paste and add it to the sauce. Sauce will thicken. It's great!

So this is an easy week for me. No real preparation, so I have time to recuperate. And next week I'm gone on Friday again! I always leave leftovers, but then Keith takes the kids out anyway, so I'll probably just let them fend for themselves this time!
