Heat sugar, milk and butter to boil in a saucepan. Once boiling, let boil for 2 minutes. Remove pan from heat. Add cocoa and vanilla and mix well. Then add oatmeal (this gets hard to stir)! Place on wax paper using a teaspoon. Allow at least 6 hours to harden (this is the hard part).
I made batches and batches of something similar to these in the summer - no turning on the oven to get cookies! I added raisins, sunflower seeds or ground almonds to sneak a little more nutrition into ours.
We call these "frog" cookies (because they're brown and squat and lumpy), but I like "chocolate frosted sugar bombs" better! Are you "Calvin and Hobbes" fans at your house, too?
About Me: I'm a Christian author of a bunch of books, and a frequent speaker to women's groups and marriage conferences. Best of all, I love homeschooling my daughters, Rebecca and Katie. And I love to knit. Preferably simultaneously.
Mmmmm they sound good! (And easy!) I just might have to try these this week...
Thanks for sharing!
